Sauteed Greens with Leeks and Garlic

I am really really into this cookbook right now. I'm so greatful for the beautiful abundance of local kale available around here. Recipe can be found here.


I actually, somewhat accidentally, created a Body Ecology plate. 80% vegetables, 20% millet, and including cultured veggies, follows the BED guidelines.

Top right is the sauerkraut. The big fluffy thing on the bottom of the plate is the most delicious recipe from the Body Ecology book...Millet "mashed potatoes", which is made up of lots of cauliflower also, so the plate can still be considered 80% veggies. That millet/cauliflower dish is so simple, but to "live" for...so great.

Four-year old approved!
